Chef Mark Guatelara
I was born and I grew up in the Philippines. I found interest in food—working as a delivery driver for my mom’s catering business. I then decided to study culinary arts and was given an opportunity to be a trainee at the JW Marriott Grande Lakes in Orlando, Fl. I then worked myself up from a cook to running the kitchen at one of the restaurants in Old Town in Chicago. I then decided to get back with the Marriott family working for restaurants and catering at the Chicago Marriott O’hare, Orlando World Center Marriott, and the Gaylord Texan Resort. Went back to work in Chicago for a restaurant group before I moved back to Texas and started working at the Renaissance Dallas Hotel in the catering department which was my stepping stone to becoming head chef at Asador, my dream job.
With my passion for food and innovation, and all the training and experience I have garnered through the years, I’m always excited to put my take on known and unknown dishes. Applying my personality not just in kitchens I work in but in food I work with.
